After looking through a lot of cabbage recipes, Bill decided to try something new. He wanted to make something that was different from the other recipes we have with cabbage. Brats and cabbage go together well, so to add more interest he added apples for sweetness and cranberries for tartness, and onions because onions go with almost everything. Flavoring was simple, a light touch of vinegar and brown sugar with a little onion powder.

                   Cabbage and Brats
                             Bill and Carol
4 pork bratwurst
1 & 1/2 Tbs lard
4 slices cabbage ("steaks")
3 apples
1 onion
1/2 cup dried cranberries
2 Tbs cider vinegar
1 Tbs brown suger
1 tsp onion powder
salt and pepper

Instructions

Cut cabbage into "steaks" from top to base. Steam 5-8 minutes until tender. Skewer to hold together.

Brown (cook to 160F if raw) brats in the lard. Use oil if lard not available. Use high temp if pre-cooked, medium low if raw. Remove from pan.

Fry cabbage "steaks" until lightly browned. Remove from pan. Reduce heat.

On low heat add onions and cook until they become clear. Add apples, cranberries, vinegar, brown sugar, onion powder, salt and pepper. When apples are softening add cabbage and brats. Cook a few minutes to warm everything.
