This recipe uses the velveting method on the steak, which leaves it smooth and very tender. Rather than the usual sauces we opted for Korean barbecue sauce. We used the Akira brand, which has barely any heat. Other brands can be pretty hot. The basic recipe is below, but we added mushrooms, water chestnuts, and cherry tomatoes.

                   Pepper Steak
                            Bill and Carol
about 1 lb. steak     1 large onion
1 ea. green and red bell peppers
                 tenderizing
1/4 cup water      2 tsp baking soda
1/2 tsp each salt and sugar
                 marinade
1/2 cup Korean Barbecue Sauce
1 tsp oil       1 Tbs cornstarch
                 sauce
marinade
1 tsp ea. grated garlic and ginger

Instructions

Cut steak to bite-sized. In a bowl mix the water, baking soda, salt, and sugar. When dissolved add the steak. Allow to sit 1/2 hour to tenderize, then rinse thoroughly.

Whisk together the Korean barbecue sauce, cornstarch, and oil and add steak. Let rest 1/2 hour.

Microwave cut peppers and onions for 2 minutes, then cook in pan on medium heat with a Tbs oil until desired tenderness. Remove from pan. Add a little oil if necessary.

Heat pan until oil is very hot and just starting to smoke (350F). Saving marinade cook steak in pan briefly to brown. Remove steak from pan.

Add garlic and ginger and cook for 1 minute until fragrant. Add marinade and cook a few minutes until it thickens. If not thickening mix a tsp cornstarch with a tsp water and add.

Return steak and vegetables and cook briefly stirring until everything is coated. Usually served with white rice..
