This is another old Brashear family recipe that Carol grew up with. It used to be pretty popular in both the Midwest and the South, but has fallen out of favor and isn't seen much anymore. It's something a little different and really nice with fresh lettuce. Sometimes this is served with a sliced hard boiled egg.

             Wilted Lettuce with Bacon Dressing
                            Carol
3 or 4 slices bacon
2 Tbs onion diced small
1/4 cup cider vinegar
                   2 Tbs sugar
1/2 tsp salt
2 Tbs water

Instructions

Fry the bacon and onions and set pan aside. Remove bacon from pan. Combine sugar, vinegar, water, and salt and microwave to heat enough to melt the sugar.

Add liquids to the bacon grease and onions in the pan. Whisk together and cool slightly them pour while warm over lettuce. Top with bacon and Sliced hard boiled egg (if desired).

Notes - Best with fresh lettuce. The garnish is chive flowers.
