Inside the tortillas is tender pulled chicken mixed with some salsa for flavor. It's then drenched in a sour cream based sauce flavored with spices, canned chilis, and onions. Lastly it's topped with Jack or cheddar and sprinkled with Coteja cheeses. Bill can't stand cilantro but if you like it be sure to add some.

                     Chicken Enchilladas
                              Carol and Bill
2 cups pulled chicken
1/2 cup mild salsa        6 8" flour tortillas
shredded Jack or cheddar       Cotija cheese
                   sauce
3 Tbs each oil and flour
1 and 1/2 cup chicken broth
3/4 cup sour cream     1/4 tsp garlic powder
1 tsp each cumin and chili powder
1/2 tsp each oregano and sugar
2 oz canned chilis       1/2 onion diced small

Instructions

Braise or boil some boneless chicken or use leftovers. Pull fairly small and mix with the salsa and set aside.

In a saucepan warm a little vegetable oil and add spices and flour. Simmer until color starts to be a little tan. Add the remaining ingredients and continue simmering for another ten minutes until it starts to thicken. Add a little sauce to coat the baking pan.

Warm the tortillas three at a time for 15-20 seconds in the microwave to soften. Roll the chicken into them and arrange in pan. Pour sauce over top than add cheeses.

Bake at 325F for 20 minutes

Notes - We like a little heat, but not very much. If you like more first taste the canned chilis. They vary a lot in how hot they are. If you want more you can add cayenne or hot sauce to get it where you want it.
