This sauce was inspired by a Macaroni Grill recipe that we liked. It's a very flavorful and potent garlic and herb sauce so a little goes a long way.

                     Garlic Rigatoni with Sausage
                              Bill and Carol
1 can (6oz) Cento tomato paste
3 Tbs Wishbone Robusto salad dressing
3 cloves garlic minced
1 Tbs Italian seasoning
1 Tbs parmesan or pecorino romano
1/2 tsp red pepper flakes
extra sharp provolone
                   4 Italian sausages (sweet)
rigatoni

Instructions

Cook pasta in a pot following box instructions until desired tenderness. We used Barilla Mezzi Rigatoni. Save a couple Tbs of the pasta water.

Begin with the sausage. In a pan add a little oil and brown on medium heat, turning as necessary to keep from burning. When the interior temperature reaches 150F remove from pan. Cut to bite size.

Add minced garlic to pan with a little more oil if too dry. Cook briefly to soften and add Italian seasoning after a minute or two. 2 tsp each of garlic powder and roasted garlic powder could be used instead of the garlic.

Add tomato paste, Robusto dressing, Parmesan, and pepper flakes. Also add 2 Tbs of the cooking water from the pasta and stir until mixed well. Cook for a couple minutes then add pasta and sausages and mix thoroughly to coat everything.

Shave some of the extra sharp Provolone to top.

Notes - Serves 4.  This simple dish lends itself well to additional ingredients like peppers, onions, pepperoni, mushrooms, olives, and more.
