While we both like mushroom soups we never really loved them and
rarely decide to have one. Bill came up with this one after seeing
a recipe for Caramelized Onion Soup that originated in a Idaho ski
lodge. He made some changes and it's now a hybrid between an onion
soup and a mushroom soup that we both like better than any
mushroom soup we've ever tasted.

Instructions
Start
with sauteeing the mushrooms in a little butter until most of the
water comes out. Remove from pot. Sautee the onions until well
caramelized and very tan in color.
Add the remaining butter and the flour and cook stirring until it
takes on a tan color. Next add remaining ingredients except the
cream and mushrooms and boil lightly until the alcohol from the
wine cooks off. Remove from heat and add the cream and mushrooms
and cook on low for a few minutes. Never boil with any dairy or it
can break.
Notes - We used salted butter and broth. If using unsalted you'll
need to add a little salt.
