A while ago we tried a frozen Sesame Noodle dish we found at the supermarket and we decided it was nice for a change. Of course the next time we went to pick one up we found out it was discontinued. In time we really wanted to have it again so there was nothing to do other than make one ourselves. W did the pork, peppers, and onions more in a fajita style to make it a little different from our other stirfry-type meals.

                     Pork and Sesame Noodles
                              Bill and Carol
1 lb pork loin or tenderloin      1 med. onion
1/2 each green and red bell peppers      1 Tbs lard
sm can each water chestnuts and umbrella mushrooms
1 bunch scallions     3 Tbs sesame seeds              noodles
                Sauce
1 cup tahini       1/2 cup peanut butter
3 Tbs each soy sauce and rice vinegar
2 Tbs each garlic paste and ginger paste
1 Tbs sesame oil      1 tsp sriracha
2 Tbs brown sugar    1 Tbs vegetable oil

Instructions

Cut peppers and onions into strips. Toast sesame seeds in dry pan until they take on a little color.

Sauce - Thoroughly mix all sauce ingredients in a bowl. It should taste overly vinegary, but that will fade once added to the noodles., pork, and vegetables.

Start with the pork. Cut into a few large pieces of even thickness. Toss with flour and cook on medium high in a little lard. Try to get some browning but do not go over 150F internally. Add  little extra lard if drying out. Remove from pan.

Add peppers and onions to pan. It will be hot so keep moving them around until they are at desired tenderness. Remove from pan.

Cook noodles as per directions on package. Add noodles and sauce to pan and stir until coated. Add pork and vegetables, excepting scallions, and all together on low heat until eating temperature. Top with sesame seeds and scallions.
