This potato salad is pretty lively thanks to the addition of Mrs. Exley's Mayonnaise. Carol grew up with that sauce handed down from her Aunt Pat. It dates back to at least the 1960's, but nobody remembers who Mrs. Exley was.

                   Brashear Family Potato Salad
                            Carol
5 or 6 Yukon Gold or Russet potatoes
3 stalks celery
2 Tbs yellow onion diced
2 hard boiled eggs diced
1 cup Hellmans mayonnaise
1 cup Mrs. Exley's mayonnaise *
salt and pepper

Instructions

Peel and dice to bite size the potatoes, boil in salted water until fork tender. (About 10 minutes)

Meanwhile in a large mixing bowl finely slice the celery and add the diced onion.

When the potatoes are still warm and drained, add them to the bowl and immediately add the Mrs. Exley's mayonnaise. Gently stir together those ingredients and add the jarred mayo and salt and pepper.

Lastly add the hard boiled eggs and gently combine them into the mixture.

Chill for a couple hours to let the flavors combine. Serve garnished with a little chopped parsley.
