This is a quick and easy way to make stuffed peppers and something we do from time to time. Be sure to use a microwave safe dish. Ground beef cooks perfectly well this way and other fillings will too. The recipe is for four large bell peppers.

                   Microwave Stuffed Peppers
                            Carol
4 lg. bell peppers
1 lb. ground beef
1 sm, onion diced
1 cup uncooked minute rice
1 25oz. jar marinara sauce
1 Tbs grated parmesan
1/2 tsp salt
1/4 tsp garlic powder

Instructions

Cut the tops off peppers and remove core, seeds, and pith.

Mix the other ingredients with 1/2 cup of your favorite tomato sauce, then stuff into peppers.

Stick tops back on peppers and place into microwave-safe bowl.

Cover with stretch wrap leaving one corner open and microwave on high for 30 minutes. If using smaller peppers with less filling cooking time will be shorter. Interior temperature should be 140F to be sure meat is cooked.

Top with remaining sauce.
