One salad Carol's always been fond of when she was growing up is this recipe from the Black Lantern Restaurant which was in Defiance, Ohio. The restaurant's closed now but this decades-old salad recipe lives on for us.

                   Black Lantern Salad
                            Black Lantern Restaurant
2 fresh tomatoes
3 cups chopped lettuce
1/4 cup grated parmesan
5 Tbs red wine vinegar
10 Tbs extra virgin olive oil
1/4 tsp each oregano, garlic and onion powders
extra sharp provolone (shaved)

Instructions

In the bottom of a serving bowl roughly cut up the tomatoes.  Add the oregano, garlic, and onion powders.

Using a wooden or hefty serving spoon, crush and stir the tomatoes until you have a blended and juicy tomato base.

Add your greens, oil and vinegar and toss to combine with the tomatoe mixture.

Sprinkle the grated parmesan over, shave a little provolone, and toss to combine. Serve with warm crusty Italian bread.

Notes - We think Campari brand tomatoes are the best tasting supermarket tomatoes for an off-season option. You'll need 4 or 5 of these.
