Come August we like to go to a peach orchard and pick our own right from the trees. Peaches should never be chilled and supermarkets ruin them that way. Even farm stands sometimes bring in peaches that were refrigerated, so we want to be sure to get ones that have never been chilled. This is a simple recipe we put together and enjoy every year. It never gets old for us.

                   Our Peach Melba
                            Bill and Carol
fully ripe peaches (never chilled)
raspberries
pound cake
vanilla ice cream
Chambord raspberry liquor
whipped cream
sugar

Instructions

Use peaches at the height of ripeness from a source that doesn't chill them. This recipe is all about great peaches.

Peel and cut peaches. Add sugar to taste. Warm in microwave until just warm.

Mash raspberries with spoon. Add a splash of Chambord and sugar to taste.

Cut pound cake into 1/2 - 3/4 inch cubes.

Form a ring with the pound cake. Add the ice cream on top. Add the mashed raspberry mix inside the ring. Add the peaches around the pound cake. Top with whipped cream.

Warm fresh peaches and cold vanilla ice cream just spell summer on a plate!
