Two of our favorite roast beef sandwiches.

This is one of Bill's early experiments. It does seem strange but when you taste it the combination does really work. It's a cold sandwich that''s just a little different. We make it with either Swiss or Munster and various sauces like Mayo, horseradish, or Shedd's.

Scroll down for the second one.

.   Back when Arby's only had a few things on their menu Bill would sometimes stop there for a Beef 'N Cheddar, which came on an onion roll. One day we had some really nice shaved  roast beef from the deli counter and he was wondering what to do with it. He came up with a warm sandwich on an onion roll and decided on cheddar to top it. Only after it was done did the lightbulb appear and he realized he made the Arby's sandwich. One thing Arby's doesn't have is caramelized onions which turned out to be just what it needed. Choose your own sauce for this one - Carol likes a horseradish one and Bill prefers Shedd Sauce.

                   Improved "Beef 'N Cheddar"
                            Bill
shaved medium rare roast beef
sharp cheddar
onion roll
sauce

Instructions

Warn the beef lightly but don't cook it. Place salted beef on bottom of roll and broil in toaster oven to melt cheese. Warm top of roll and caramelized onions. Assemble.

Making caramelized onions - Cut onion into fairly thin "rainbows". Microwave for a minute or two to soften. Saute in a pan with butter on low, adding a tablespoon of water if they start to dry out until they take on a nice golden color. This takes a while, but they keep well in the refrigerator for other uses so make plenty.
