When we're in the mood for a Chinese stirfry-type dish we make a variety of pan fry versions using beef, pork, or chicken. They all get done pretty much the same way and we may use a variety of different sauces, so this is just an example of one. For most white-meat chicken dishes we buy Perdue tenders. They always turn out tender and juicy. Chefs can cook all these ingredients at once and have them all be done perfectly because they do them hundreds of times. We do things separately because that's safer.

                   Cashew Chicken
                             Carol and Bill
1 small pkg chicken tenders
1 red bell pepper
1 large onion
1 cup roasted cashews
1 small pkg snow peas
1 can water chestnuts
1 small can Mandarin oranges
sauce

Instructions

Start with the chicken. In a large pan add a little oil and cook chicken on medium heat. Use a thermometer if you have one and stop cooking at 150F. This will be tender and juicy. Remove from pan.

Next start cooking the onions and peppers. When they reach the right (for you) level of tenderness add the snow peas, cashews, chicken, and sauce. Cook a few minutes, then add the chestnuts and oranges, stirring to make sure everything is coated.

Serve with or over white rice. Some work well with Asian noodles too.

Quick Homemade Sauce -

1/2 cup soy sauce
1/2 cup chicken broth
2 Tbs fresh ginger minced
2 cloves garlic minced
1 Tbs cornstarch
1 Tbs honey or brown sugar
1 tsp sesame oil
1 tsp white or rice vinegar

combine and mix in bowl

Notes - The important thing to insure everything is cooked properly is to do the meat or seafood first, then the vegetables that take longer, then the ingredients that barely cook, then add it all together. As for sauces there are many recipes available and the supermarkets have a wide variety of bottled sauces. A quick make at home sauce is below. Other ingredients that work well are broccoli, bok choy, straw mushrooms, pineapple, sesame seeds, hot peppers, and baby corn. A little lemon juice or rice vinegar at the end can add brightness,
