One of Carol's summertime favorites is her Gazpacho made when we start getting ripe tomatoes from the garden. It's really good if you have good tomatoes but not bad at all if they're just so-so. We're of the opinion that everybody should grow tomatoes - they're just so much better than you can buy. The other vegetables are fine from the supermarket but the tomatoes rarely are even half as good.

                   Carol's Gazpacho
                             Carol
1 48oz bottle V-8 juice
4-6 medium tomatoes
1 green bell pepper
1 small sweet onion
1 cucumber
3 stalks celery
2Tbs olive or vegetable oil
2Tbs red wine vinegar
2tsp celery salt
salt and pepper

Instructions

In the bowl of a food processor with a chopping blade, start with the cut up celery and onion and pulse a few times to start them chopping. Next add the cucumber and pepper and a few more pulses.

Empty these into a big bowl. Lastly throw the cut up tomatoes into that food processor and pulse to a nice chop but not as far as a juice.  Empty them into that bowl with the other veggies.

Pour in the bottle of V-8 juice, vinegar and celery salt. Stir thoroughly and store in a large glass canning jar  or pitcher with a tight fitting lid and chill.

It will keep in the fridge for about a week. Serve cold with cheese or herbed croutons. And maybe a sprinkle of parmesan. Heat can be added with hot sauce or cayenne if desired.
