Every so often we cook a pork butt and have had to come up with other things beside roast pork dinners to do with all the pork. There's a sandwich from the Philly area that has matched the famous cheesesteak there. We had some sent to us because Carol had never had one. It was a big hit so we set out to make our own with the leftover pork. We saw one of the cooking shows visit the source of the original one - Tommy DiNic's in the Reading Market. He showed how they were made so we set to work. This is pretty authentic.
