We like the occasional meatball sandwich, but they were becoming a little boring with just the meatballs, sauce, and mozzarella. We had a look at making them a little more interesting. We didn't want them to taste like spaghetti with a different starch or too much like a meatball pizza. After trying a few different things we settled on adding pepperoni, aged provolone, and balsamic green peppers. The end result is a more flavorful combination that really moved a tired old sandwich up a notch or two.

                   Meatball Deluxe Sandwich
                             Bill
meatballs and sauce
sharp aged provolone
green Bell peppers
pepperoni
balsamic vinegar
long sandwich roll
grated parmesan
red pepper flakes

Instructions

Use your choice of sauce and meatballs, but beef meatballs are best for flavor.

Start by softening the peppers in butter with a dash or two of balsamic vinegar. When they reach the desired level of softness remove from pan and wipe it.

Next spread the pepperoni out in the pan and warm until fats melt. Go until crisp on the edges if desired.

Add the meatballs and sauce and peppers to warm.

Warm the roll with cheese in a toaster oven or microwave until the cheese melts.

Assemble. Sprinkle with parmesan and or rep pepper flakes if desired.
