Bill comes from southern New Jersey where everybody grows tomatoes, so in the summer there's always great flavorful tomatoes out in the yard. When he does grilled cheese he grills both sides of the bread to increase the buttery, toasty flavor. Most of how good a grilled cheese and tomato will be depends on the cheese and the tomato. For his version he uses home grown tomatoes and a 4 to 5 year very sharp aged cheddar.

   This is his favorite sandwich.
