This is Bill's version of the famous Pam Pam Steak Soup. Pam Pam East was a restaurant in San Francisco that Carol would make a point of stopping in with her airline crew friends when she was in town. Their Steak Soup was something she fondly remembered. Bill decided to try making a version with some changes to add a more rounded flavor. He never had a soup with ground beef before that he liked so set out to make this version adding some extra flavor to make it more of a cheeseburger version.

                   Bill's Burger Soup
                             Bill and Carol
1 & 1/2lb. ground beef        1 large onion
1 Tbs Montreal Steak Seasoning    1 tsp sugar
3 carrots      3 stalks celery     1 potato
1 28oz can diced tomatoes
1/2 lb. butter (2 sticks)     1 cup flour
3 qts. beef stock     1 tsp Accent
2 Tbs ketchup      1 Tbs yellow mustard
1 tsp onion powder
4 oz cheddar cheese
1 & 1/2 cup cream

Instructions

To get a steak-like taste to the ground beef, follow this method. Add a tsp oil to the pan and heat it until searing temperature (300-350F or so). Add beef and press flat in pan. Sprinkle with the Montreal Steak Seasoning, a couple pinches baking soda, and sugar. Check for searing and flip sections when seared to sear the other side. When both sides are seared break up to small pieces. When no pink remains, add all vegetable other than tomatoes and cook until softened a little.

Empty pan into soup pot and add butter and flour. Cook stirring constantly for 10 minutes on medium. Add a little beef broth if too dry to prevent burning. Add beef broth, tomatoes, and all remaining ingredients except cream. Simmer for 1 hour then add cream and cook on low for another 10 minutes.
