Every year we've made corned beef for St.Patrick's Day and every year we made Reubens with the leftovers. We got to wondering what else you could do with corned beef and were coming up blank. It doesn't seem to go with much else, other than corned beef hash. Bill came up with this idea and it turned out pretty good. It's a breakfast sandwich featuring corned beef with egg, fried potato, and cheese. We added pickle to this one, but onions and peppers or tomato would fit well too.
