Hamburger Steak seems to have a lot of different versions. Many include eggs and bread crumbs in the burger, which makes them more like fried meatloaf than steak. When Bill first heard Hamburger Steak, he thought that meant a burger that tasted like steak, so he made one that way. The flavorings are simple and just enhance the beef and onions a little. Fresh 80/20 ground beef is best to get a good steak flavor. This one's for onion lovers.

                   Loaded Hamburger Steak
                            Bill
2lb. ground beef (80/20)
Montreal Steak seasoning
                 onion gravy
3 lg. onions
1 sm. pkg sliced mushrooms
1/2 stick butter
1 Tbs Dijon mustard
2 tsp Worcestershire sauce
1 tsp onion powder
3/4 cup beef stock
1/2 tsp cornstarch

Instructions

Cut onions into "rainbows". In one pan sautee them and mushrooms in half of the butter until soft. This can be speeded up by a couple minutes in the microwave first. After they are soft add all but a couple Tbs of the broth. In a small dish mix those 2 Tbs with a 1/2 tbs of cornstarch and add. Cook down until it thickens. Take off heat.

In a small dish mix 1/2 tsp baking soda with 2 Tbs. water. Brush burgers with that. Dust burgers with the Montreal Steak seasoning (or similar basic seasoning) and a pinch of sugar. (The baking soda and sugar will aid browning.) Fry in a pan with a couple Tbs. oil on medium heat. The goal is good browning on both sides and medium rare (130F) in the center. The burgers should taste like a steak this way.

Smother burger with plenty of the onion mix.

Notes - If you're after the old fashioned diner kind this isn't it.
